Abstract

Temperature is one of the most fascinating physical parameters from a biological point of view, as it closely governs the presence or absence of life in different habitats. This fundamental role of temperature for life has also been exploited by scientists, and it was Louis Pasteur who in the 19th century observed that food alteration was associated with the presence of microorganisms, and discovered that heat treatment could be used to kill those microorganisms that deteriorated certain products
